Shakshuka My Way

This dish is a famous traditional dinner in Egypt. One of the most requested orders in any Egyptian restaurant. This dish depends on big flavors with minimal ingredients. It has many versions and can be done in different ways, including a slow cooked method! But my version is time saving, uses only 5 simple ingredients and very satisfying.

Ingredients:

1- 60 gms chorizo
2- 1 whole tomato
3- 3 eggs
4- 70-80 gm radishes
5- 15-20 gm parmesan shredded.

Method:

1- start by slicing the chorizo to 1 cm slices and the radishes too. You can use Egyptian Sausages instead or any spicy Sausages.


2- to a pan on medium heat, add 1 tablespoon olive oil and add the chorizo. Fry on 1-2 min each side until the fat in the pan changes color to the beautiful ruby red.


3- add the radishes and tomato and give them all a toss.


4- add the eggs and season with pepper only. Don’t forget the chorizo is spicy and salty and we still will add the cheese.


5- turn the heat off. Shred the cheese on top and cover with a lid for 5 minutes until the cheese melts beautifully.


Serve with pita bread or any fluffy bread.

Notes:

1- I tried this recipe with 2 types of Sausages : Egyptian (sojok) and chorizo, they both gave fabulous results. Don’t use any flavorless Sausages or less you will need to add garlic, onion and spices. So by using these ingredients only you can have a very tasty dinner.


2- if you want to use a less number of eggs then decrease the other ingredients as well or else it will be very salty.
